Souvlaki Salmon Fillets Recipe
This salmon recipe became an instant favourite the first time I made it. I’m a sucker for garlic and souvlaki-flavoured recipe doesn’t disappoint. I like to make this with oven-roasted asparagus.
Ingredients
4 salmon fillets (skin and bones removed)
2 tbsp extra-virgin olive oil
1-2 cloves garlic, minced
1 tbsp grated lemon peel
1 tsp dried oregano
1 tsp sea salt
1 tsp ground pepper
2 tbsp lemon juice

Directions
Combine olive oil, garlic, lemon peel, oregano, sea salt, ground pepper and lemon juice. Pour over salmon fillets. Marinate for 30 minutes.
Brush a non-stick pan with olive oil and heat. Add salmon. Cook for 2 minutes or until nicely browned. Turn over salmon.
Place the pan in a preheated 400°F oven and cook for 8-10 minutes until cooked through.
