If you're looking for a simple and tasty side dish with an Italian flavour then give this recipe a try. Fresh green beans in a tomato sauce is a perfect pairing for a lot of chicken recipes.

Ingredients

1 lb of green beans
1 medium red onion
1 clove of garlic
4 tablespoons of extra-virgin olive oil
1 1/2 cups canned diced tomatoes
1/3 cup dry white wine
6 leaves of fresh basil

Directions

Snap off the ends of the green beans and clean them in cold water. Finely chop the garlic cloves and thinly slice your red onion.

Heat the oil in a large pan. Add the onion slices first and cook for 5 minutes or until soft. Add the garlic and cook for about a minute (be careful not to let it burn).

Add the tomatoes and a 1/2 cup of water. Season with salt and pepper. Add some of the basil and turn up the heat.

When the sauce comes to a boil, add the wine and stir. Reduce the heat to medium-low. Add the green beans and cover with the tomato sauce.

Cover the pan and cook for about 15-20 minutes on a low heat. Stir the sauce over the green beans occasionally.
